Fundraising Projects for the Disabled with AIAS Spoleto

Hi! I need your advice! Do you know of EASY craft projects to do with people who have physical and/or mental handicaps? 

I will be working with them in art therapy / occupational therapy type encounters. We are creating items to sell at a charity fundraiser (end of July) for AIAS Spoleto, which funds and sponsors many projects year-round for people with various disabilities.
